For those counting carbs but missing desserts, here is the latest effort to fill the void. Cadwell, who has written several diabetic cookbooks, now capitalizes on that background by turning to the low-carb genre. A broad range of recipes is included, from cakes and pies to custards and meringues. Complexity varies from relatively elaborate to ridiculously easy (frozen grapes, anyone?), but all are geared to the busy home cook. To keep carb and calorie counts low, sugar substitutes, fat-free products, egg whites, and sugar-free pudding and gelatin mixes are featured prominently, along with fresh fruit, which is a welcome surprise. Carb and calorie counts are provided for each recipe, except in cases where there are options in the preparation (e.g., using either skim milk or water). Overall, the recipes serve as good ideas for ways to indulge your sweet tooth while watching your waistline.
