Overview


Essentials of Human Nutrition is the established starting point for those embarking on courses in nutrition and related fields. It has proven to be an invaluable textbook for studetns requiring a broad, quality survey of the subject. This third edition has been updated amidst the increasingly buoyant recognition of the role of nutrition in health and disease status. Accordingly, the book charts the involvement and impact of nutrition across the lifespan and at community level, based on a sound foundation of nutritional science.

Coverage of topical subjects, such as functional foods, synthetic and mimetic ingredients, along with the spectre of chronic disease, and nutritional crises in the world, fuels study for assignments and essays.

Figures and tables have been compiled selectively to provide a digest of the practical data and processes, such as nutritional assessment and measurement, with which students need to be familiar.

Description: This book covers what the authors deem to be the essentials of human nutrition. It covers a variety of topics from the basic concepts underlying nutrients and human nutrition, to the application of nutrition theory and nutrition counseling in clinical and community settings. This second edition is published three years after the initial edition.
Purpose: The purpose is to introduce students to basic nutrition concepts and nutrition tools used to understand nutrient requirements, intake, and nutrients in relation to disease. It is a more focused version of standard introductory nutrition textbooks. This abbreviated format permits more readily updated information, a benefit with the rapid changes in nutrition practice.
Audience: Written by a variety of nutrition professionals worldwide, the book is aimed at nutrition students but also meets the reference needs of medical students/professionals. It provides general nutrition background and guidance rather than specialty nutrition or disease information.
Features: This book covers both macro and micronutrient theory and requirements, and moves forward through nutrition-related diseases and therapy. Nutrition assessment is covered, along with both clinical and community settings for nutrition therapy. The book is easily understood, and would be well-used as a reference. While some chapters are very detailed, due to the relatively short chapters and diversity of topics, some topics lack the depth required for a full and detailed conceptual understanding.
Assessment: "This second edition has appropriately updated nutrition information and will provide students with current thinking on nutrition concepts and theories. The book could easily be used as an introductory textbook for nutrition with the added benefit of providing some applied nutrition concepts (uncommon in introductory books). "
