Finding that the first recipe in a whole grain cookbook is for puff pastry cheese straws, followed by, among others, Fettucini Alfredo and Mom's Chopped Liver, might surprise most readers. However, although Gelles does include some recipes like these, she presents a great deal of information on all types of grains along with several hundred recipes, each accompanied by its nutritional breakdown and health tips (for the fettucini, ``eat only a bit''). It's not that her recipes aren't good, for they are, but one wonders what some of them are doing in a book concerned with calorie, cholesterol, sodium, and fiber contents. Buy for the information on grains and for the many easy but different recipes.
