It's ironic that, at a time when more Americans than ever are assiduously following low-fat diets, more cookbooks than ever are focusing on the sweet stuffs of life. To her credit, teacher and author ("The Antipasto Table") Scicolone presents more than the traditional tiramisu and zabaglione, including a range of more than 160 biscotti and tortes, tarts and spoon desserts, from almost every villa in Italy (and from some American contributors as well). Each chapter starts with hints for baking and cooking that particular treat; devotees of biscotti, for example, are advised to bake only one cookie sheet at a time. And, yes, she does pinpoint a few of the recipes as lower in fat and calories than others, most notably the fruit desserts and ices. But who could resist mascarpone cheesecake, Parma chocolate tart, apple bread pudding, and honey gelati?
